I don't get it. Let's say that I genocide every Christian in the world. Is that religion dead since there's no one worshipping Jesus or whatever? If twenty years passes and someone decides to become a Christian because he agrees with stuff from the Bible, believes in the whole story and admires the religion's history, would he be a larper?

no, genocide =/= conversion and submission
former pagans globally were converted and/or submitted to christianity, islam, and other religion. barring North and South America, much of these conversions were (largely) by choice as well.

i can’t think of any pagan groups that id consider to have been truly “genocided” by Christians (barring North and South America)

ethnically or religiously discriminated against? sure. wars? yeah. but the Christian missions to the Celts, Slavs, and Germanics were all incredibly peaceful.

the baltic and finnic states were literally leading regular raid parties on Christian towns and strongholds and would slaughter Christians as well. i’m not justifying it but the northern crusades were more a war than a genocide, especially since the baltic pagans continued to exist after the wars anyway
