Because if you get brain damage, you're not the same person anymore. Which shows that your entire "person" is just a culmination of memories and biological functions that work together to make (You) experience reality.
There is nothing linking (You) with your pre-birth state. (You) will never exist again.

The thing that doesn’t make sense to me is how we’re able to just pop in and out of existence for a finite period. We came from a nothingness where there is no concept of time, and we’ll return to that same nothingness once we die. Yet for the brief period we’re conscious and alive time is a universal binding force. It doesn’t make any sense.

Consciousness is entirely biological, it doesn't exist outside of your body. You won't ever be aware again. It will never form in the same manner.
If reincarnation was real in the sense that you describe, how can the population grow from nothing? Where do the "new" consciousnesses come from?
Maybe there's an outside reality that you can't measure or perceive, but that isn't something that can be proven.

I don’t think reincarnation exists, I was just giving an example. I just don’t understand the loss of consciousness that happens at death and what comes after. Something comes after the nothingness prior to being born, otherwise we wouldn’t exist.

I'm a huge believer in the "we're in a box, unable to look outside" theory. Whether the box is some sort of simulated reality or something that naturally formed due to an extremely unlikely set of circumstances, who knows.
Consciousness itself is probably biological, but the ability to observe might not even be linked to consciousness.
You might have always been observing, unable to form memories that would catalogue your observations.
Although this is pure /x/ territory since none of this shit can be quantified inside the box, if the box exists.
