Sure. This is very close to their canon info (I think).
The Aki sisters are basically heralds of autumn in Gensokyo (the other seasons' heralds are easily guessed). Due to their status as lesser deities with limited faith, they are often considered 'wild' or 'feral' gods and can be difficult to distinguish from youkai. Despite this, they have a niche but fervent following in both the human and tengu populations. Tengu have a lot of autumn imagery, so I assume that they like the season a lot. In their signature season, their powers peak. But during seasons outside of autumn, especially winter, they are known to be more reclusive.
Shizuha Aki's domain concerns the aesthetics and cultural aspects of autumn. Shizuha is responsible for the turning of the leaves. Her methods are not always purely divine, as she is known to physically paint the leaves by hand, which accounts for the beautiful but sometimes inconsistent coloration across the land. She also scatters fallen leaves by kicking the trees (which gives her some good leg strength).
Shizuha is the more artistic and cultured of the pair. She holds a sense of superiority regarding the beauty of her domain (the leaves) compared to her sister's (the harvest). However, she is secretly jealous of Minoriko's greater popularity among humans. Like a model senior sibling, she's protective of her younger.
Minoriko Aki's domain concerns the agricultural bounty of autumn. Minoriko's power is to ensure a plentiful harvest of autumn crops. She cultivates each plant individually, which limits her overall output but results in exceptional produce. The quality and abundance of her harvest are directly proportional to the faith she receives. Her sweet potatoes are particularly famous and highly prized.
Minoriko is cheerful and simplistic and generally lacks the dignified air of a typical goddess. She is content with her smaller workload and has a reciprocal superiority complex towards her sister, though she envies Shizuha's artistry. She sometimes also assists Shizuha in painting the leaves. She notably goes barefoot to remain connected to the earth, even though she claims to be image-conscious. She perpetually smells of sweet potatoes and other harvest fruits.
The sisters of autumn operate a successful agricultural enterprise from their homestead. Other than their divine produce, they also brew their own alcohol, including the Divine Wheat and Aki's Autumn Primeur. I'd like to think that while Minoriko does the gardening work, Shizuha also assists in alcohol making and marketing the products.
Minoriko is a key figure in human farming culture and is annually invited as the special guest to the Human Village's harvest festival to bless the crops.
The sisters are worshipped at a number of small but dedicated roadside shrines (hokora) on the outskirts of the Human Village.
Their role as B-list celebrity providers of food and beauty gives them a small but respected position in Gensokyo's pantheon.
As for Reimu, she gets the plums from several ume trees around the shrine. Their non-mundane properties stem from their unique position, as they draw nourishment not from the soil alone, but also from the spiritual energy of the Great Hakurei Barrier's nexus point, upon which the shrine sits. Such an arrangement makes the trees almost entirely self-sufficient, requiring no cultivation. Which suits the red-white's laziness perfectly.
I also did other things, like how the Former Hell takes care of the surface's trash (by scavenging it first and feeding the true refuse to the Remains of Blazing Hell and the Nuclear Furnace) and Yukari operating Gensokyo's version of Uber Eats.
