How might an average Joe get a chance to spend some time at sea on a ship of sail? I specifically mean these reconstruction type vessels, not a modern sailboat.

Naval school in one of European countries. IDK if Americans do that too but pretty much every Euro country has a sailing ship or two for precisely this reason. Even inland guys get a chance.

It's pretty doable. Iirc there's a ship in Gray's harbor in WA that is a sailing tall ship. They take volunteers all the time. It's not the only one in the US either. These will be smaller ships than a training ship like the Amerigo Vespucci though.

There are various museum ships up and down the east coast like the Mayflower reproduction and the Mary E my advice is to call their respective organizations up and ask to volunteer.
