For one, most of the length of a Greatsword is an actual threat. With a spear there is a much smaller part of the weapon that can actually do serious damage. If your opponent manages to get past the tip of the spear while you're twirling around you're probably cooked.

The wushu dance that OP posted is meant to be a performance, not training for battle. However, they do have other Kung Fu styles that they do swear by. For example, if you were to study Shaolin kung fu, they'd teach you Shaolin wushu (similar to the gif) and Shaolin quan (in theory, a more practical attempt at defense).

Genuinely curious, it seems like a lot of these "defensive" martial arts forget the most important parts of not getting involved in self defense situations.

This is retarded. The spear is a staff with a point or two. A staff is frankly the biggest pain in the ass to fight against with pretty much any weapon other than another pole arm. As long as the person using it isn't one of these specs.
Every part of a pole arm is both an offensive and defensive tool. It can be used in close quarters or to gain reach advantage at will. Even with the point snapped off you can get your skull crushed. Limbs shattered. The quarter staff was quite feared and that had no pointy bit.
Bladed non pole arm weapons dont do well against wooden pole arms. Its not the movies. The forces generated by a big wooden stick are mind numbing.

China has real effective martial arts like sanda (chinese kickboxing) and shuai jiao (chinese jacket wrestling), but they don't really celebrate them. The CCP prefers to hype up the flippy mystical kung fu as a cultural export and to boost tourism.

I'm basing it off the fact that when I searched Baiji up, all I got was an extinct freshwater dolphin native to the Yangtze. The closest martial arts to Baiji I saw was Baji/Bajiquan, but google sucks ass now, so maybe they're to blame.

My Chinese still sucks after decades of kung fu, it's one of those Romanizations.
Muslim Imperial bodyguard style, some very interesting moves and more amenable to Westerners training it because the Hue's body proportions are closer.

Sanda is great, but it's new. It doesn't really belong in a discussion about historical martial arts, just like how Japanese Kudo and Western MMA aren't talked about in a historical context. In historical martial arts, people would practice with weapons that are nowadays considered obsolete. For example, traditional Wing Chun would also teach spear techniques for soldiers and knife techniques for civilian self-defense.
