Long time shooter, (Technically) first time buyer.
Have only owned guns that have been gifted to me before, but I'm looking to make my first purchase, a .22 MP5. How does online gun buying work? Does the gun get sent to your FFL of choice, then you fill out the 4473 at the store? or do you fill out the form online?

Yes, you pay for it online and then select what dealer it is to be sent to.
Then you go to that dealer, pay for the transfer and fill out a 4473 there.

You should check in advance what dealers charge for the service in your area because it can vary wildly. No sense paying $100+ when another one down the street will do it for $20.

You pretty much have it. I'd double check with the store itself that they do transfers and ask if there are any quirks in their store process. Better to double check than have a firearm in limbo at an unhelpful FFL.

I might pull the boomer move and recommend a 10/22, those .22lr MP5 thingies are hard to take apart. I think they're swag but maybe a 1-0/22 would be a better first rifle

Is that 740 a 308? Triple K makes a 10rd magazine for that caliber. Don't know if they are any good, but it can be like an ersatz battle rifle.

Glock is solid and so are Savage 110s. 270 Winchester is an underrated caliber as well, basically American 7mm Mauser only using .30-06 as the parent case. All you need is a shotgun and maybe a smaller handgun to conceal.
