the whole "the pilot is limiting the G" is bullshit. Whenever we pulled even just 7-8G we had the plane down for dozens of hours of structural checks, in the extremely rare cases we pulled 9s the jet was down for months.
In modern scenarios you'll never pull that many Gs anyway. High G (70-80G) is the realm of missiles and new sidewinders

Shitty US planes maybe, Eurofighter design G load is 15G. Even with the improved G suit that also squeezes the living shit out of your arms the pilot is the soft spot.
Flight control system limits sustained G to 9 cause the pilots can't handle it, instantaneous onset spike is 12G.
Could be dialed up no problem and ofc engineers can make even tougher planes.
