Would variable geometry wings be doable?

a fighter that somehow has to re-enter atmosphere -might- have a reason to do that

they've discovered you can design wings just better without making impossible space consuming decisions

Doable, yes, but there is almost no chance that this would go beyond maybe one working prototype, just for demo purposes.
You would need to come up with some really impressive material that could handle the stress of supersonic flight at the tips of those wings. Also, with this shape, I believe the fuel capacity would be reduced which is also not really great.

Reverse swept wings were an interim step on the way to diamond wings, which do the same useful stuff but have more lifting area.

I can't beat that level where you have to bomb a bunch of ground targets within a time limit.

You've got to get used to lining up your targets and taking them in one pass. If you miss then just move on to the next target in front of you instead of coming back around. That mission is tough since most of the planes you have so far only have enough ammo for an almost perfect run.
