Taiwan would lose if it focused on strategic targets since it'd be almost impossible to supply them.

Taiwan just has to sink all that crosses, which isn't too hard if they have enough munitions for it and some brains. China will eventually give up after enough shipping losses. They'd probably destroy a lot of Taiwan's infrastructure via bombardment to save face or whatever, but they'll still lose.
