A Nikon Z9, as an example of a top-end camera used by professional photographers for things like motorsport, or aircraft flypasts has a continuous burst fire rate in .RAW image format of 20 frames per second, for up to 1000 frames.

that's 50 seconds of continuous still shots.

If you drop that from .RAW to .JPG format, it can do that at 30FPS, for more than a minute.

Its literally point, aim, press the button, and go through the shots later to find the ones that are best.

Stealth is a spectrum, and directional. It would become more observable, mainly from aspects where a radar would have line-of-sight on the missing panel. The plane overall would still be stealthier than any 4th-gen fighter and RCS on the opposite side would be largely unaffected.
You would still want to get the plane back at base for repairs ASAP, for mechanical reasons moreso than stealth.
