Amish are anabaptists, the whole concept was they viewed infant baptism as incorrect and invalid, both because Christ was baptized as an adult, and it must be a conscious understood choice made by an adult. That mentality applies to the Amish way of life as well, it has to be agreed upon by someone who understands what they are doing.
It varies based on community, but you may have heard of Rumspringa. Before baptism, Amish people go out and experience the outside world and decide for themselves what they want. There is an intentional push for you to experience modern life, and whether you want that or the Amish way. I chose to leave. Simple as that. Most don't.
