That is a match target rifle, not something that is practical for hunting. It's going to be very heavy, have lots of finicky little adjustments and features that do not play well with being out in the woods & getting dirty, and the sights are less than ideal.
Get something lighter with a scope. Reload speed isn't really important.

I also want to try shooting ranges, shooting sports or what it's called. I was thinking that the 200 STR would be perfect for this, maybe also hunting.

CNS hits are instant. Shots that cause death by blood loss can take varying amounts of time to be lethal. Sometimes it's very quick. Sometimes it takes many seconds or even minutes if the shot is not very good, during which time the game might run a considerable distance.

It's a great rifle for target shooting. But, if you want to do that I suggest you check out your competition scene and see what you want to do. Different organizations have different rules and also different guns are preferable for different styles of competition so make sure that is legal/appropriate for what you want to do first.

Swiss straight pulls are hardly faster than normal bolt actions. Get a dedicated modern hunting straight pull if you really don't want a semi-auto.

the thing you picked is a target rifle and not a hunting rifle and most people don't care about fast follow up shots for rifle hunting. like even historically guns with faster follow up shots never displaced single shot, lever action and bolt action rifles because a quick follow up shot isn't a big deal. it is a big deal for shooting birds, so faster cycling actions like pump actions, double barrels and semi autos were very popular for shotguns

OK, thank you for your answers to my question. Next, do any hunting rifles do burning or poison damage? I feel like for hunting, if I’m only expected to get one shot off, some kind of damage over time effect would be optimal. Is that an ammunition thing instead? Or is it something the barrel transfers to the bullet?

but you don't even own a k31 and you dont know anything about hunting rifles. metallurgy and barrel quality has vastly improved in the last 50 years, an off-the-shelf ruger american is going to shoot 1moa with good ammo.

OP everyone is giving you shit because they don't know shit.
The one you posted is probably the fastest bolt action out there, and you're going to be fine using it for hunting too because it's a great firearm.
They use these specifically for a form of race shooting called "Stangskyting" in Norway, you should Google that to see vids.

You can get it in 6.5 Swede which is what I'd do, and you'd be good out to just about any range you'd want to shoot at.
If you can find one to buy at a reasonable price go for it.
