I was fucking about in Florida riding my bike on a nature reserve trail. Got stuck in the sand and was digging myself out when I saw a dead pig just off the trail. Suddenly realized I was surrounded by black water and bush full of gators and hogs and that riding that far in was not a great idea.

I wouldn't risk eating them. wild animals can be safe from parasites if you know how to handle the meat but there are other risks. it could have poison in it's system from a botched trap, or a prion disease could spread amongst a population for whatever reason.

They're bland because they're fed a bland diet and castrated and parasite-free because they're medicated. Feral hogs can taste heavenly or they can taste like death; a young sow that's been eating windfall apples will be some of the best pork you'll ever eat but a musky boar that's been eating acorns and silage will be inedible.

It's like any other omnivore - it tastes like what it eats. In most of Alaska you don't even have to take the harvest the meat of bears hunted in the fall because the meat smells and tastes like rancid salmon.

The solution is simple. Import hunters from east europe and balkans for a short term. They consider wild hogs a luxury to hunt and can prepare some real mean good food with them, which is preservable in canned form for years.
Probably would be cheaper on a ratio of 5 for 1 when it comes to hiring locals which would be less motivated to bother hunting boars.

Do some states actually prohibit that? I helped some professionals set up their trap on a neighbor's property. They get the whole group in a big corral-type thing and drop the gate to close them in. Then just walk the perimeter popping them in the head with suppressed .22 rifles after they calm down. That was 6 or 7 years ago and they never came back.

General rule is if you cook anything to about 140 degrees internal temp all parasites die. When it comes to taste age and diet are the factors to look into. 50-60 lbs is usually the sweet spot for wild hogs. Bigger than that it can get nasty.
