Okay, long story short, daughter is a cutter like her mother before her. Can't have knives in the house.
Need a knife I can keep with me at all times. I have one of these but it's more of a show off.. "GERMAN Army knife". haha.
Want one with a real blade.
cut meat and vegies to prepare food.
cut food at dinner table.
In the last two weeks stabbing people as not been a need, so lets not consider that.

What should I get? I prefer something that isn't stainless steel, of course. Cuz I want sharp.

the whole "stainless is never good" hasn't been true for ages. but i'm not going to recommend some expensive supersteel knife to you, instead for your purposes get a victorinox folding vegetable knife in plain edge (not serrated edge). Or get two straight away, they're inexpensive and very light.
Victorinox steel is decent enough (1.4110), and easily resharpened, so you're also gonna buy a Worksharp Precision Adjust to keep them sharp.

For those purposes, I would get a Spyderco Resilience. You might want to try a larger Opinel like a 10 or 12. They come in carbon or stainless steel. I've had a #8 carbon as my only food knife for 10 years. But a larger blade is better for food. Stainless would probably be better for food as well.

That's not good, but it is better to evaluate and come to terms with that than to sit in denial which is hurting yourself and your family. If you read his posts above, he is being forced to remove all knives from his house by Child Protective Services (CPS). He doesn't have a choice in the matter, if he wants to be able to cut things at home, the blade apparently has to be on him or locked in his vehicle.

My objection to camping cutlery sets like this is that you need to wash them immediately before putting them away. Ask anyone who's actually had to eat lunch in the field; you don't always get time, soap and water to scrub your utensils right afterwards.

Steel making has come a long way and there are new a blend of "Stainless Steel" hitting the market.

Manga cut steel can be expensive, but I've been using them for about a year, and have served well with just the occasional oiling once a week and had to polish a blood stain just once with some flitz.

most magna cut steel knifes I see are fixed bladed geared to toward bushcraft or tactical folders, but I see some interest in using them for kitchen knives; being that magical balance of good edge retention and corrosion resistance.

The Kershaw Leek is a EDC pocketknife that I use for mostly cutting packages, binding and letter opening, but I imagine it could make a good paring knife.
