Regular armies stand no chance against a mature dragon. They do not often take part in wars, at least as dragons. No weapons are needed on their part and no mundane weapons are effective against them.
However, dragons do not raise their young, and juveniles are often killed or driven away by armed forces.

Sometimes a lich or the like will instigate or participate in conflict. Undead armies are incredibly feared and deadly. They require no sustenance, never tire, and can take much more abuse before keeling over. Worse yet, your fallen join their ranks. This is pretty rare though. Liches who could orchestrate things like that mostly don’t care enough to do so.
Occasionally people will try riding some monster or the other into battle, but they usually aren’t docile enough to do that.

This is a fantasy world and of course people with superhuman abilities exist. Most of them aren’t that far beyond human level, but the strongest can turn the tide of a war singlehandedly. Of course it’s not like they’re a replacement for an army, but a nation without at least one strong person puts itself at risk.
At a lower level, superhumans are extremely important in everything from communication, to logistics, to healing, to direct attacks. Generally a nation will train as many of these people as it can afford.
Also, a lot of races have darkvision. Doesn’t always come up, but it’s important when it does.
