A nerve agent probably won't kill them because, they don't have to breathe, but would it interfere with thinking and/or motor function? depends where you hit. Generally, the brain, heart, and the liver must be destroyed. However, if one must be chosen, go for the heart.
Contrary to popular belief, their heart does need to pump blood and if it is destroyed and/or damaged, they will fall into a coma within ~5-10 minutes.
They can heal from this, but it takes a few decades, so the brain and heart can then be destroyed at your leisure.
The bullet must be very hot in order to successfully pierce the skin (roughly 650F) so you would likely be better off with tracers than alkali bullets unless they were designed to immediately ignite on contact with the air.
Stakes don't need to be made of aspen wood, they just need to be hammered hard enough into the heart that it goes in quicker than the flesh pushes it out. Generally you need the help of another 2 or 3 men to be able to hammer it in hard enough and quick enough.

I would think a sabot is your best bet. Same concept is when people try it in shotguns.

I'd think if you had the shaft held by an 1"+ of sabot/felt wad I would stay stable through the barrel. Once it leaves the barrel, don't know how accurate it would be though. At short distances if it's a thick enough stake it should penetrate decently.
