Is it really possible to go building by building, street by street and clear out a city like this if it's occupied by a hostile army? Is the only way to take a modern metropolis just bomb it flat with air/artillery or surround and cut off supplies like food and water until the defenders surrender?

Tangential question. Ukraine defends the towns and cities to the last. This makes sense. The couple of times Ukraine has taken swathes of ground back from Russia, the Russians have abandoned the towns and cities. Why? Isn't a war of attrition while defending in Russia's favor?

depends on how much of the populace is willing to fight you, and how big the occupying army is. if the army is literally the entire citizenry? yes. you will have to destroy the city to take it. if not? there are likely whole city blocks you will walk through and clear without firing a shot. cities can be very personnel intensive to defend properly, and with air superiority and support, your infantry should be calling in accurate autocannon fire on any positions actually entrenched or defended in full.

This is also common in some Southern European countries and even places like Moldova and Bulgaria.
There's places like Soroca, Moldova and Buzescu, Bulgaria where gypsies who "made it" show their wealth by buying a plot in that neighborhood and building McMansions but they don't install windows so that the buildings remain unfinished.
