You'd probably already be dead. It was really hard to sink wooden ships, so if the enemy had managed to put enough holes in the ship to accomplish that, most of the men below decks would have found themselves in the path of the shot that made those holes.

Quick googling says its bilge pump failure that was somehow turned worse by repair attempts. Odds are it took hours to get to the point where ship starts to take in water from gun ports and all the holes in the deck. Only the end is fast.

the one mentioned in the article is a reproduction of one of Columbus's ships, Santa Maria, the correct term for those is carrack (nao in Spanish) rather than a galleon, which were much larger

Considering that's a pressurized system failing a 16th century sailor would never see anything like that if the bilge was leaking. It'd just be a rising water level, the draft on those ships isn't really deep enough to get above 1 bar of external water pressure.

I didn't buy the remaster, so I'm stuck with HD Edition (which is about as good as I remember AoE2+Conq being, with the added benefit of the extra unique techs and civs). DE is still getting active development, though a lot of it is coming as paid DLC.

They used to do interesting addons for the DE that filled blanks on the map and fleshed out existing civs but since last year they've switched to off topic content like Three Kingdoms or the Persian Wars that should be covered by AoE1.
