They're also not very long and read pretty easily. I'd recommend trying out Small Gods, Wyrd Sisters, The Colour of Magic or Guards, Guards to start with.

Each line series has some linearity to it but they don't really interact much with each other, if that makes sense. If you decide to start reading Guards! Guards! (the first city watch novel), the fact that you haven't read the various witches novels is irrelevant but if you start reading the city watch series with Night Watch (the sixth city watch novel) you're going to be missing five novels' worth of context for the characters and that does matter. Not that that's very relevant, because most people who read more than one Discworld novel eventually end up reading all of them.

My personal opinion is production order best order, but that's just me.

There’s 3 areas where they definitely didn’t.
The Dorne and Ironborn plot lines after a certain point are already completely different to what happens in the books. The Euron Greyjoy and Ellaria Sand that exist in the show are basically original characters that are very loosely inspired by the books.
I also don’t think Cersei is intended to rule right up until the end in the books. And I think this and the Dorne plot line being completely reimagined are related. They probably took various beats and details of Young Griff plot line that they skipped completely and gave it to other characters, as we already see in how JonCon’s greyscale plot is folded into Jorah or why they decided to name Jon Snow Aegon or why they introduce the Golden Company for a minute just so they can fight for Cersei and job to Daenerys. They probably dispensed of the Dorne plot line because it’s going to intersect heavily with the YG plot line. Otherwise they probably would have wanted to introduce a hot young female POC character with lots of sex scenes like Arianne Martell.
But ultimately none of these plot lines probably directly feature in the ending, which is probably fairly accurate to George’s plan.
