look at a list of bestsellers in todays day, youll notice most are books written by already successful people with the rest being either industry plants or slop written by someone that won the literary lottery

if you don't want to follow a trend than don't lol. it's not hard. a trend means it's doing better than average or expected, it doesn't mean it's the only way to be successful. in fact there are plenty of opportunities during a trend to capture the people tired of it, or to get on board a new trend that fits more what you're hoping to do.

just do what you're good at. the advice has been the same since time immemorial.

I write fantasy as a hobby, put my book on Amazon last month and have about 60 sales so far. About 42-45 of those came from making Reddit posts about my book, 9 came from selling in person to acquaintances and friends, and maybe 5 came from other ads and people on Royal Road who bought the e-book to show support.
The trick is to form a platform, but I don't want to do that. So hopefully I can find a big booktokker to send a copy to in exchange for a shoutout

I think it was thanks to the Wheel of Time, which found a ton of success. That same decade you also had ASOIAF and then later Harry Potter which completely redefined children / YA page limits.
Suddenly it seemed like readers were assigning value to page count, and because more pages meant "less finesse editing and brutal rewrites" everyone from author to publisher was more than happy to oblige
