Often trying to make a character reach past their function is what leads to so many feeling like they don't have any personality to start with. It's the adage of less being more. Chris isn't complex but her role doesn't require her to be and we get enough snippets of information in how she acts with Al, Bernie and her parents to get a general idea of her and her life. More to point given 0080s general "groundedness" it would be weirder if she did have some complex issues. She's very human and didn't need to be some constant wooby to garner sympathy.

The GP01 wasn't fine tuned for Amuro. The Alex is said to be almost unpilotable by anyone else. Also, she went into battle on Bernie's terms because she wanted to minimize damage to the colony. Kou didn't have to worry about any of that. Not to mention, Gato was piloting the GP02 for the first time too and trying to not let it get damaged.

So long as it's written well enough, how it looks often doesn't matter. It's part of why animation as a whole has been gradually taken more seriously, going all the way back to Snow White, the first feature length animated film, being massively successful because it was just that good.
