Earth ponies deserve all of the respect for their hard work tending to some of the more important aspects of Equestrian society. Food, construction, pure strength. The whole nine yards, they're a significant chunk of the 'underbelly' of Equestria. Without them, Equestria would plunge into chaos.

Think about it, a pegasus... farming? What's she going to do, use her wings to simulate wind and blow the plant away?

Unicorns would probably end up accidentally genetically engineering the plant into some sort of carnivorous monster when they confuse their gardening book for a cursed gardening book.

For one thing, they have the best style. Imagine a pegahorse or a hornyhorse as a noir detective, for example. It can work but never as good as with earth ponies. They're why Rarity is so mad all the time.

Earth ponies are show pretty much doing every job short of making the weather happen. Hell, in Manehattan earth ponies are the elite. Being an earth pony means I can be anything, flying would probably lose its luster after a while and unicorns aren't really all that powerful.
