Well, most people hated the ending, so you'd first need them to give a fuck about the epilogue, which is a tall order.
But my take is, while I wish it could be true, the timing works quite against it. You'd need at least twenty years for Starburst to get together, make a kid, and for it to grow up into functioning age. That means they got to work even faster than actual established couples in the show like Sugar Belle and Big Mac, whose only child is still underage. A 20 year skip would also suggest that characters like CMCs would already be at hag age, likely older than the Mane6 were in the show. But the passage of time has always been nebulous, what with the Cakes remaining babies for eight seasons.
I mean you could maybe make it generous and cut it down to a 15 year skip and make Luster just a big teenager, I guess like the Student Six. Maybe. But it's funny to think that Starlight had a better functioning womb than any of the Mane6.
