As far as characters go, I bet Applejack has seen Winona going to town on rats and other small varmints all the time growing up, so I highly doubt in the context of an HiE story that she would be bothered by a human craving meat. As long as you aren't eating ponies, it doesn't actually seem like that big of a deal.
Imagine it going the opposite way though, with ponies like Rarity and AJ. Since they own carnivorous pets, they see it more as something cute than gross. They offer you a steak or something, then try to pet your head as you eat it.

I think pigs goats, and chickens are okay. AJ keeps pigs and chickens in a pen, and they don't ever talk to the ponies the way the cows do. And I know in some of the comics, goats are used as mounts and kept in petting zoos, so I doubt they're on the same level either. I thin the fact that AJ has livestock would imply that further is indeed allowed.
