The ring with a pick is put on the end of mare's leg. The mare can then pluck one of the two strings through the hole by moving her leg and the rest is like in a regular guitar

I like this kind of worldbuilding, but there's one fundamental problem in all of this. Who makes that instrument? If the luthier is pony, non-unicorn kind, how they can make all small parts and fine details when regular pony can't play the instrument without huge clumsy tools?

attach a wooden neck
attach 2 or more tendons, they can figure it out
you don't even need frets because ponies have hooves that can be used as slides
