It's tough to do G4-style pony since their faces as seen in the show don't make sense, their eyes are front-facing in front shots and side-facing in side shots.

LoE fixed this ages ago since 2012.

It's a decent enough compromise but it's not show-accurate by any means.

show accurate is nice, but once you make it it's kinda too hard to use. Like djted's models

Good on you anon, it'd be cool to see your WIP.
If I can add my two cents, the eyes' bottom line needs to be lower than the snout's top line. No matter the art style, that always makes it 20% cuter for me.

Are you gonna rig it?

The only way to get a G4 model to look 'correct' would be to utilize a camera-driven shapekey rig like this https://www.reddit.com/r/anime/comments/sfz98k/demonstration_of_the_automorph_technique_employed/
to make every angle look show accurate regardless of the actual model's form
However, most 3dfags either lack the artistry to make it look good or the technical knowledge to pull it off (as there isn't anywhere on the internet you can go to learn to do this). and good 3dfags are hard to find in the first place since getting good requires decent resources to learn from and even with infinite resources at one's disposal (yohoho) it's a fucking process.

Some plush and figurine crafters make high-quality ponies that would look great as 3d models

I am a plushmaker and indeed this is possible, but it is always a compromise. You will never get a model that looks like the show from all sides. And that is fine, 3d has different rules and different things look right. All angle accuracy is a bad concept.

G5 ponies look more like Shrek characters than MLP.

I also downloaded Blender recently and started doing the donut tutorial. My ultimate goal would be to create a pony, even if the end result was really ugly. Just the donut feels very overwhelming.

just use an image2mesh generator and edit that.

You'd probably need to make the eyes rounded/curved to accomplish this look from multiple angles.

Did DJTHED ever finish his coloratura animation?

I can tell you that the donut tutorial isn't really a good place to start since it just briefly glances over functions of 3d without fleshing them out or explaining their broad utility. It's mostly a waste of time.
The best free beginner's course i've seen is https://www.youtube.com/watch?v=PtZdDmnA1Zg&list=PL7AyBndD_6pVvgdH2tYt63KzvWcxszqP- as well as her other, more comprehensive series detailing the entire process of a character (use youtube's auto dubbing TL feature)
My other advice for starting is to autistically record notes in a word doc or something for every thing since it's impossible without years of experience to smoothly internalize everything needed to make a model look good. Checking your notes beats rummaging for a video every time you need to see how something's done again.
And of course, the most important thing is to have fun~

If the geometry gets too wonky, my favorite go-to is the Remesh modifier (modifiers are in the blue wrench symbol on right panel). Simplifies mesh surface work by a lot. Better not to have to though.
