I just remembered the most obvious example: Hound Dog. Elvis' version is so well-known that many people have no idea that Big Mama Thornton recorded it over three years earlier and he merely covered it as a rock and roll song with a faster tempo. The original is more… raw, I guess? I don't know what to call it, but it seems to have actual emotion to it, which is surprising considering that she wasn't even the one who originally wrote it but rather a pair of Jewish guys writing songs for early 50s R&B.
Elvis repackaged a song from a then-niche genre and made it palatable for consumption by a wider audience so while I personally might prefer Big Mama's version, Elvis' cover is literally the definitive version. It's the one Big Mama's is matched up against and not the other way around.
