Remember when it comes to theory alot of people are trying to say the same thing in different ways. Noticing keys that share some of the same chords, noticing how the same chord operates differently in different keys. Just like how changing the scale you are playing over a static chord operates differently. Being able to arpeggiate a chord anywhere on the neck. It's very satisfying being able to play any idea at any time or place on the guitar.

Hide specifically, since the sound vibrations apparently move through it easier than modern glues. But guitars that use hide glue tend to cost an arm and leg, because they're constructing with all kinds of old school techniques.
