A lot of it does not exhibit the, for lack of a better word, musicality of metal. Metal is harsh, yes, but also melodic, atmospheric, technical, depending on the subgenre. Nu-metal is just aggresive, in an almost comical way, and incorporates elements that just don't fit, like rap, which is sonically very different, and not very compatible with metal. Sometimes it can work, like an avant-garde experiment, but here it just comes off as "that kind of loud, aggressive music that you've heard about but never actually listened to" mixed with some elements of the popular zeitgeist of the industry. Thus, it is metal tailor-made for people who don't listen to metal. If you like it, that's fine, even I might not dislike every single song, but it is understandable why fans of traditional metal and its later (mainly European) evolution don't like it
