Because rock is an extremely limited form of popular music with a finite amount of instruments and combinations, whereas classical is a thousand year old tradition with hundreds of different subgenres, styles, forms, instruments, etc.

Life was much slower in the premodern era.
Things have accelerated to dystopian levels in modern life.
Also mass popular culture lives off fads that by definition need to come up with new stuff quickly, they are discarded in just a few years.
