Studio albums aren't usually recorded "live" though, all the instruments are recorded separately, then mixed in. That's why rock albums like In Utero or OK Computer are notable because the band actually did play live together at the same time in the studio while recording.
I get what you're saying though, but even metal and jazz have big differences despite sharing core instruments (namely guitars and drums). Improv is an expected feature of jazz whereas it's virtually non-existent in metal.
