What I've learned was that there's nothing an old car can do that a newer car can't do far better other than be Cool. And that's quite enough. If I still lived down there where my social network is I'd have yet another 67-68 Mustang as a daily but I don't here in the frozen North (just above the Mason-Dixon) so I'm stuck with a modern Challenger and a shitbox suv for work/bad weather. FWIW, after '69 or so cars started developing a much more modern feel, it's amazing how much the Challenger reminds me of my 70 Mach 1 by the view from the inside, so if you want the more "classic" feel you'll want 68 or older.
Oh, another thing. Older cars are far better at keeping the sun off you than modern cars which keeps you cooler than you'd think, though still hot of course. I could be out in the day in one of my 60's cars down there but would refuse to leave the house until dark if all I had was a modern car with their 10ft of dashboard and no a/c.
