Measure wheel spin, heading, speed, etc. With those systems on the car will modulate power and apply braking as necessary to correct loss of traction and spin outs. That's what the inside of a modern ABS unit looks like. You have the two primary brake fluid input/output ports, two ports per wheel, plus two ports which I'm assuming go to the proportioning unit.

It's braking hydraulic unit. It does ABS / TCS/ ESP and some of the stupid shit with advertising names manufacturers have come up with.
The system has sensors at the wheels that detect slip. In the unit it uses magnet valves and a DC motor to run the pump. It's a bunch of solenoids yes. I was usually ESD strapped on an ESD mat working on this stuff. Just posting random google images.

I've done that lots of times in different vehicles (RWD, FWD, several sorts of AWD) with not only gravel but ice, snow and dirt, and never ever spun out, I'm pretty sure that stability systems never engaged especially if driving in a relatively straight line (cornering is another story). You've no doubt seen dozens of clips of SUV drivers doing the same thing as that miata, but they end up rolling over. There's only so much using your brakes can do to save the car at that point when the steering inputs are so wrong. Also notice the driver didn't hold the brakes, that mistake alone is what caused him to get hit by the truck.
