Even $150k 1000hp GTR builds are so unreliable you can barely run a single drag race with them.

Why do people who mod cars want something so shit when you could just buy a 911 turbo or c8 zr1 and do 9s all day long.

It's generally a good thing to take proprietary control of your vehicle, and any decently popular make will usually have aftermarket parts available that can have higher quality than stock and allow for better performance while still fitting the spec.
That being said, once you start doing radical modifications like this, you basically attempting to design a new car from scratch, but without the capital for thousands of manhours of testing and fabrication of protypes OEM's have to iteratively work out all the kinks to ensure that a vehicle can run reliably until the warranty runs out.
Everyone just takes it for granted that if you get into making a big project car like this it means dealing with constant mechanical gremlins to keep it rolling which can also sometimes end catastrophically.
