You can just stock blocks under the wheels and use jack as 2ndary safety along with

I've done this before. You don't need a hoist, but you do need to drop the subframe. Just keep the engine/tranny (engine mated part) suspended from the top with chains/straps while you pull the subframe and tranny (bellhousing part) out the bottom. The subframe is easier to handle if you unbolt it at the strut column instead of fucking with ball joints, and when reinstalling the subframe you can put a jack under one side and use the strut bolt holes and a drift pin to line up very easily. You'll need to check the alignment obviously, but if you mark the subframe bolt holes you should be able to line it up the same as before.

I mean the suspension strut where the wheel is, you should be able to just remove the two big bolts at the bottom and avoid messing with ball joints. At least that worked on my SUV.

It's so much easier putting the subframe back on if you only have to line up those two bolts per side. You can even just lie on your back and bench press it into position then slam the bolts in if you feel like it.
