Hike the West Coast Trail. I did this past may and it was a great experience. Very challenging

Belgium is nice for cycling but really boring for hiking. Germany and France have much better trails, it's not even close. Spain too.

b*lgium, but big. When you come across what remains of nature, expect tourists in flip flops. A few gems are there though and there are some great trails for beginner /out/ists

Over a quarter of Germany is protected land. As has been said elsewhere you might find a lot of family farms and simple hiking trails in those spots but there‘s a wild array of distinct environments in varying skill levels.
