It is going to be. It's one of the reasons it's not a commercial crop.
Also it does bad real fast. So freeze anything you're not eating immediately

In my experience, you want to start with gently washing and drying them. Store them in the fridge overnight, preferably a whole day. This'll firm up the skin, which tears easily. Cut them in half, scoop out the insides with a spoon. I've found two main methods of removing the seeds from the pulp. One is to dump all the pulp and seeds into a pot with an equal part water. Cook until soupy and strain. The other is to take a metal colander and metal bowl, chill them in the freezer. Throw the stuff into the colander and stir it around. Should remove most of the pulp in the bowl. The cold metal helps reduce smearing.

I grow then on my property. I have 6 trees. Only one made fruit though, and many fell unripe. I'm guessing due to the sudden cold weather.

Man pawpaws are delicious. Wanted to hit the festival up in Maryland but apparently it was ticketed and they sold out. Never heard of a fruit festival having to sell tickets but good for them I suppose
