I will go shopping tomorrow and I need aomething for portraits and car photography.
The options are:

•Canon EF 85 f/1.4L
•Canon EF 70-200 f/2.8L II
•Sigma 85 f/1.4 Art
•Canon EF 135 f/2L

As far as I know those are all good lenses. I don't know much about car photography, but for portraits 85mm is the modern choice. 135mm is a bit of an old school portrait focal length, but still useable. Just yesterday I picked up an old Pentax 135mm f/2.8 and it's a fun lens to use.

As usual, the primes will have higher IQ and are faster, but less versatile. If you think you can do car photography on an 85mm prime get one of those (whatever is cheaper - both great lenses), but if you want more flexibility pick up the zoom. Or, if you want two lenses pick up the 85mm and 135mm.

All excellent choices. The 70-200 would be the "best" choice out of all of them but would be heavy and relatively expensive, but virtue of just giving you way more options for framing and background compression.
The 135mm might feel a bit tight especially if you're doing shots in a lot or at a showcase, but would be a good performer. Out of the list you provide I would pick the Canon 85mm though.

There's also the EF 85mm f/1.8 and EF 100mm f/2 that aren't expensive and are generally very good optically. On a full frame they'd both still provide huge amounts of bokeh.

I could consider getting the cheaper options, since I'm taking photos mostly as a hobby, but I want to eventually turn it into a side gig. So I figure maybe I should slowly get the high-end stuff.

I have a bit of experience shooting cars. You're probably going to want to just go with an 85. That will give you nice telephoto compression without having to stand really far away from it. Now if you plan on shooting them on the track the 70-200 will be more useful. That really just turns into sports photography and I think you'll need something even longer if you're shooting races.
I also suggest an f1.8 because they're much less expensive and you probably won't get any use out of f1.4 for cars.
If fact you could get an 85mm f1.8 and a 70-200 f4 that will buy you a ton of different shots for less
