my question is, what happens if they do? does nuclear material spread all over? i'm guessing that's why they haven't done it already.

It is in the US' best interest that both Israel and Iran waste themselves, their stockpiles and their personel. It mitigates the outsized political influence of both countries and gives the US, Russia and China an opportunity to make aa huge amount of money reconstructing them (this will largely be laundered tax dollars though). Now that the cherry is popped, no need to rush.
