It's a trivial definition to use the Caucasus mountains as the boundary between Europe and Asia. Caucasians are not defined by that boundary, by your own reasoning.

People tend to invent boundaries based on those psychological things more than is obvious. The dividing line between Eastern and Western Europe closely matches the psychological predisposition to co-exist with either Asians or Africans. The only real exception to that might be to think of Eastern Germany as Western Europe, but it could just be said that Ethnic Austrians live in Germany as much as Ethnic Germans live in Austria.
