Japs are not only decent with their own food, they also have the intelligence and technique to better other great foods.
For example french pastries, they are excellent with that, some of the best cakes i've eaten, also ingredients like beef as their kobe variety is one of the very best in the world.
Sadly their attempts at mexican are piss poor, same with their burgers for some reason as i've tasted better in a bunch of fast food places in the US, they also don't attempt italian. Their whiskey is also superior to others except maybe the fancy stuff from Great Britain.

i was specifically talking about a variant of donburi. it's just salmon and rice, nothing else. i had it in japan and it was some of the best sushi i ever had. sushi chef wouldn't even allow wasabi or onions sauce near the dish as to not "taint the flavor"

That's the thing, well said, but knowing how to "fix" or prepare ingredients is also a major skill. A japanese chef making a nigiri with top-tier rice and excellent tuna is not knowing how to cook but knowing the ingredients well, giving a cook some shitty dry tuna and some random chinaman rice from a Dollar store and having the guy cook you a great bowl is more valuable.
Many fancy chefs get dunked when given normal ingredients, that's the difference between kitchen divas and real cooks, that's why italian food is great, those guys and their recipes just work with anything as long as it is not rotten or stale. Japs have advanced techniques for mundane ingredients but their real jewels in their cuisine depend massively on quality ingredients, other than maybe some ramens because their broth-making techniques are french-tier complex, particularly the ginger pork one.

Basically. The biggest thing to gain is adding the different Indian spices to your cupboard and learning to use them. If you do that you can really make some interesting dishes and make an interesting twist on non-Indian cuisine. This can be expanded to most regional foods though. Fermented or long processed foods as well as any culture with a haute cuisine (eg, French or Japanese) remain more difficult to replicate.

I really like Indian from time to time but it isn't interesting at all, and it's sooooo basic. Mostly just a thickened broth/coconut milk of some kind that's combined with a SHITLOAD of spices and whatever veggies (and sometimes meat) they just throw in. A toddler could prepare an Indian meal. It's all very similar too. Like the range of flavor difference between a standard red/green/yellow curry and a vindaloo and tikka masala and and a biryani isn't big at all. They all taste like the same dish made by people who just used different recipes to get there. Samosas are the best thing that India ever came up with.
