I must clean it properly. I saw a chinese recipe once where they cut it put lots and lots of salt and wine, washed it a bunch of times with it, then strained and washed it with water. I have done this with every type of liver and it works. The bad fumes are on the surface.

Some people put liver in milk overnight for the same reason - to improve the smell but I've tried that and it doesn't do much. You're better of putting some baking soda and some acid and washing it that way.

Yep, hearts are highly nutritious, it's one of the most worked muscles because it's pumping 24/7, it's very good for you. Even pig heart. When my butcher has beef heart I always buy it. I eat chicken hearts almost every week, they are dirt cheap $2-3 for a 1kg and great for sauteing with butter and onions.
