when you eat a lot of butter, the fat gets stored in your cells, taking up the room that could be occupied by glucose. but since there's too much fat in them, you are essentially and practically insulin resistant, there is no more room. so what happens is that you are storing fat in tissues that were not really designed for it, like the muscles and the liver. so high fat diets make you insulin resistant, give you fatty liver, and muscles like wagyu beef
even olive oil is unhealthy for you (inflammatory, etc) if eaten on it's own. you need to have veggies with it. or even just the olive. let's say you can get 1 tbsp of oil from 10 olives. it would be much healthier to eat the 10 olives than to eat just the oil, as the olive meat mitigates against the inflammatiry effects of the oil.
