Germans hadn't even mobilized yet, so how could it be defensive? The Russian mobilization was entirely offensive in nature which is why the first thing they did was send armies to invade both Germany and Austria-Hungary.

This had been all pre planned earlier that summer by the Russian Foreign minister, Sergey Sazonov and the French ambassador to Russia Maurice Paleologue. Russia and France were to launch joint invasions (not defenses) of Germany and spitroast Germany, ultimately breaking it up.

The Austrians and the Russians should have traded Serbia for Galicia+Volhynia, simple as.

The Eastern Territories were (and still aren't) very well suited to bulwark up and fight a defensive war and the German army was well suited to fight a mobile aggressive war on the open field. And their early successes in Russia proved them right militarily, but not diplomatically obviously.
But there is also a lot to say how openly, especially the Anglo press was salivating at the thought of going to war with Germany for the last 30 years before 1914. It's hard to have good negotiations if every move you made for the last 30 years gets branded as warmongering anti-Anglo scheming.

Against France? There was never the possibility of a purely defensive German mobilization, they had to act offensively and quickly and decisively because they knew if they failed to quickly knock out France the war was lost, and they were correct in that assumption.
