From personal experience, I would bet it's because most raises are basically an insult. A 5% raise, if they're being extremely generous, when prices of necessities at minimum tripled, is an insult to the worker. A day to piss around at work plus not have to seethe at that insult is more valuable than the paycheck increase.

I'd bet my own money that if they broke up cash bonuses and put them in phsycial envelops which the employee could pick up at the end of the work day as frequently as they held pizza parties instead of bonuses only beings applied a particular times of the year as a single sum it would be far more effective at motivating people. Try having a Christmas pizza party and no other throughout the year and see how that compares against people's Christmas bonus. It's apples and oranges.

When you look up the actual article, it was a company that had 4 groups of workers on a computer chip factory production line
Each group was promised something if they had good production that week - pizza, $30, words of encouragement, or nothing
The group that was getting pizza improved 6.7% while the "encouragement" group was 6.6%, cash 4.9%
Then the cash group dropped down to under-perform, meaning that there was something else affecting it, not the promise of reward
