I live too far north for a greenhouse to be effective in winter and nothing grows under 4 feet of snow. Best my greenhouse gets me is a month or 2 extra growing time before it lacks the insulation to keep plants alive.

Damn, that's rough. Well, you can still plant some (not many) varieties of hardneck garlic if your winters are that rough. Most websites will give you a heatmap for what they recommend based on your location. Yield mostly depends on the variety and sunlight though. I'm harvesting the three varieties I planted for my mother this evening when I visit, but they were shaded by an apple tree so they're not too impressive.
