Recipe:
1/2 cup flax meal pre-hydrated in 1/4 cup of water
1 1/4 cup of water
2 tbsp sugar
1 tsp salt
3 tbsp melted lard
1 cup Infibra bread flour https://farinainfibra.it/en/bakery-range/
3 cups King Arthur Organic bread flour
1 tbsp bread yeast
Dissolve the sugar and salt in 1 1/2 cup of water. Add the yeast and let it bloom.
Melt the lard, but don't let it get too hot.
Add all the flour to a stand mixer with a bread hook.
Pour the lard all over it. Add the hydrated flax meal.
Add the bloomed yeast mixture.
Mix it all together using the mixer, adding either small amounts of flour ot water to get the right level of hydration and texture.
Take the dough out of the mixer and put it on a flat surface,either oiled or floured and knead the dough until it's a bit springy and resists kneading. Don't over-knead.
Put it back in the mixing bowl after spraying it with olive oil.
Let it rise for about 30-45 min depending on temperature.
Take it out, put it back on the flat surface, punch it down, flatten it out, and roll it into a cylinder shape.
Put that into a 9 1/2 in x 5 in bread pan that has been sprayed with olive oil.
Let it rise again for about 20-30 min then put it into the oven preheated to 375 F.
Let it bake for 30 min then take it out, plop it out of the bread pan and onto a cooling rack.
Let it cool for at least an hour before cutting.
