It's basically what lighting your brain perceives the dress as being under. The dress is the exact same color that a white dress would be in the shade from the sun, and also the same color it would be under yellow interior lighting. I think the photo does a bad job of conveying which lighting the dress is in, so the brain itself has to choose which lighting context dominates the photo.
