Rangefinder on the control/viewing system combined with some math. They go out of their way not to have the rangefinder on film so it is better consumable by the general public. That would be my best hypothesis.

They know it takes 5 or 6 seconds for the mortar to hit the ground at that particular altitude and it goes almost straight down if the drone is stationary, they knew it was likely the boat would berth where the dock is lower, they positioned the drone directly above a point in its path, then it was simply a matter of leading the target, which can be eyeballed easily by someone with countless hours and hours of practice in some camp in Poland.

They practice a bit and create a UI overlay for the strike zone of the type of ordnance they are dropping.

They know how long it takes for the ordnance to fall from what altitude, and you can also design UI elements that help with tracking average walking speed / running speed (that dingy is probably moving at about walking speed).

You just see the raw video, but the operator probably has an overlay and of course their experience. They would also probably not post their bad misses.

That those bombs have control surfaces on the rear vanes that allow them to be steered them a bit as they fall. You can see how during the first half of the fall it was going straight down, but once the rear vanes got the bomb settled vertically it veered towards the target.
