I do this with no bell pepper, 2x jalapenos, 2x garlic, and a tbsp of fish sauce and onions sauce added to the beef broth and holy shit it is the best thing I've ever made. Pressure cooking makes the meat almost dissolve in your mouth, but just slow cooking it is still delicious.
Also browning the beef until it reabsorbs the grease and gets a little crispy instead of draining it, a chef taught me that and it's been a lifechanger for any recipe with ground meat

Tried adding a square of dark chocolate and it did not make a difference.

You absolutely put fish sauce in chili.
~1 cup beef broth
2 tbsp syy sauce
2 tbsp fish sauce
1 tbsp worcestire sauce
(optional: 2-3 tbsp tomato paste if it's going into a bolognese or chili)

It's pure umami, and adds a ridiculous amount of richness to any ground meat dish. I learned it from a Michelin starred chef.

Wel high effort slide thread, I've been doing my part. I buy the ground pork from the local independent grocer for $1/pound and I make my own tortillas from flour, salt, water, and lard. Funny thing is that the lard allows you to roll it thinner and they are actually lower calorie than pure flour ones since you can use less martial. Strangely it goes best with American cheese. Technically I should make my own sauce as well, but I use the bottled taco bell sauce. It tastes better than anything in the store these days.
